Cabbage Mandolin / Slicer
The quickest and easiest way to achieve finely cut cabbage is with a mandolin. Place the cabbage in the box and then move from side to side over the blades. Uniformly-cut cabbage threads make consistent-textured and flavoured sauerkraut. When cabbage is cut uniformly and thin, it all ferments at the same time. If some cabbage is thick and some thin, the result can be that some parts are too mushy, and others too crunchy, which is not a good sauerkraut.
