Growing schedule: Sow in May for a winter harvest.

Sowing depth: 1-2cm

Planting distance: 8-10cm between plants; 40cm between rows

Growing conditions: Chicory prefers full sun and moist, freely draining, moderately fertile soil.

Forcing: In November lift the entire plants (including the roots) from where they have been growing and cut the leaves back to around 2.5cm, leaving the growing tip intact in the crown. Pack the plants into a box or large pot with roots planted into moist sand or compost with their leaf stubble above the surface. Cover to exclude all light and put them in a warm place. Tender chicory heads should sprout from the roots in around three weeks to a month.
